Asian Cucumber Salad
This sweet and refreshing salad is a perfect compliment to nearly any meal.
Serves 4-6 Prep: 10 min
- 2 cucumbers, 1/4 inch slices
- 2 carrots, cut in julienne strips
- 1/2 red onion, cut into 1/2 inch slices
- 1/2 cup rice wine vinegar
- 1 Tablespoon unrefined sesame oil
- 1 Tablespoon salt
- 1/2 teaspoon black pepper
- 1 red jalapeno thinly sliced (optional)
- Place cucumbers, carrots, and red onions in a salad bowl.
- Combine rice wine vinegar, unrefined sesame seed oil, salt, black pepper, and red jalapeno in a separate bowl and stir vigorously.
- Pour mixture over cucumbers, carrots, and red onions.
- Let cucumbers, carrots, and red onions marinate in mixture for 5-10 minutes, then serve.
